Business of the Week: The Mozzarello Co.

One of Deep Ellum’s longest-running businesses may be small, but they certainly are the big cheese in our eyes! The Mozzarella Co., our Business of the Week, opened in 1982 at 2944 Elm Street and they have brought their hand-crafted cheeses to the neighborhood every day since. 

After five years of living in Italy and enjoying the culinary delights of the country, Paula Lambert knew that she wanted to bring Italian-style mozzarella cheese to the states by starting a cheese factory of her own. After looking at locations all over the city, she asked her friends at Rudolph’s Meat Market if they knew of any openings in Deep Ellum and they directed her to the future home of the Mozzarella Company.

In the early days when taking a break from cheesemaking, Paula and her team would spend their time visiting their friends at the Deep Ellum Cafe, the Green Room, and any other new business coming into the neighborhood and their cheeses have long been a favorite for neighborhood restaurants such as Niwa BBQ, AllGood Cafe, and LOCAL whose chefs can simply walk down the street to grab fresh, locally made cheeses! With such famous guests to the factory as Julia Child, Lauren Bacall, and Mick Jagger, the Mozzarella Company has welcomed celebrities, families, food aficionados, chefs, and everyone in between for 37 years.

Although the Mozzarella Company now produces almost 200,000 pounds of cheese a year and more than forty different products, one thing still hasn’t changed: Each and every cheese is made completely by hand. If you want to learn the secret to the best cheese in town, the Mozzarella Co. hosts cheesemaking classes twice a month to give you a hands-on experience, as well as plenty of cheese to bring home!
